What does it mean to Saute?

You hear the term saute over and over in cooking, but not many people really know what it means to saute.

The actual definition of saute means to cook with hight heat and a moderate amount of fat. Basically, we are talking about a 8 inch pan with about 2-3 table spoons of fat (oil, or butter).

When you saute, it is important to make sure that you get a pan with a heavy metal gauge hot, say 8-9 on your stove. Then you add in the fat and let it get hot until it starts to ripple.

Then you add in your meat or vegetables and quickly cook, and you want to get good caramelization on the product.

If you don't hear a good sizzling sound, and not getting a good sear, you are probably just sweating the product.

The best types of meat to saute are those that will cook quickly and are tender cuts. Cutlets, thin chicken breasts, thin cuts of fish work well.

If it won't cook through in 2-3 minutes, you shouldn't saute it.
